Colombia Supremo
Colombia Supremo
This roast captures the peak of Colombian coffee excellence, sitting right in the "sweet spot" between a traditional medium and a dark roast. By roasting the large, uniform Supremo beans slightly longer, we unlock a deeper complexity while preserving the bright, classic acidity Colombia is famous for.
Flavor Profile
- Taste: Deep notes of milk chocolate and toasted pecans with a subtle hint of dark cherry.
- Body: Smooth, velvety, and medium-heavy. It coats the palate without feeling oily.
- Acidity: Balanced and crisp—think of the refined snap of a Red Delicious apple.
- Finish: A clean, lingering sweetness reminiscent of caramelized brown sugar.
Why "Medium-Plus"?
While a standard medium roast focuses on citrus and floral notes, the Medium-Plus (often called a Full City roast) pushes further into the caramelization phase. This reduces the sharp acidity and replaces it with a rich, "roasty" sweetness that stands up beautifully to cream or sugar, yet remains sophisticated enough to drink black.
Brewing Recommendations
Method
Why it works
Drip / Pour Over
Highlights the clean finish and chocolate undertones.
French Press
Accentuates the heavy body and rich oils of the Supremo bean.
Cold Brew
Results in an incredibly smooth, low-acid chocolate "bomb."
Roaster's Note: Our Supremo beans are sourced from high-altitude volcanic soil, ensuring a dense bean that can handle the extra heat of a Plus roast without losing its unique origin character.
